Cinnamon Sugar Kodiak Cake Muffins



For the muffins:

  • 2 cups Kodiak Cakes Power Cakes Mix
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1/4 cup maple syrup
  • 3 egg whites (or 1/4 cup)
  • 1 cup almond milk
  • 1 tsp vanilla

For the topping:

  • 1 tsp cinnamon
  • 2 tsp sugar


  1. Preheat oven to 350 and line a muffin pan with parchment paper muffin cups.
  2. In a large bowl, mix together the muffin ingredients until a batter has formed.
  3. Evenly pour batter into each muffin cup, filling them almost to the top.
  4. In a small bowl, mix together the cinnamon and sugar. Lightly sprinkle the mixture over the batter in each muffin cup.
  5. Bake for 17 minutes, or until the muffins are firm to the touch and an inserted toothpick comes out clean.
  6. Cool for 3 minutes in the pan, then remove and finish cooling on a cooling rack.
  7. Store in an airtight container in the fridge for up to a week!
