Apple Cinnamon Sheet Pan Pancakes

Description

Applesauce, fresh apples, lots of cinnamon and Kodiak Cakes mix make these deliciously easy sheet pan pancakes the perfect breakfast treat.


Ingredients

Units Scale

For the pancakes:

3 cups Kodiak Cakes Power Cakes Mix

1/3 cup ground flax seeds

1/4 cup chia seeds

1 cup milk

2 cups applesauce

2 eggs

1/4 cup maple syrup

1/2 cup plain Green yogurt

2 Tbsp cinnamon

2 tsp vanilla

1 medium apple, sliced (I used Fuji)

For the cinnamon apples:

1 medium apple (I used Fuji)

1 Tbsp butter

2 tsp cinnamon

1 Tbsp brown sugar

Whipped cream (optional)


Instructions

Preheat the oven to 350. Line a sheet pan with parchment paper (mine is 17×12).

In a large mixing bowl, mix together all the dry ingredients. Add the remaining ingredients except the sliced apple and mix together until a batter has formed.

Pour the batter into the prepared sheet pan, and top with the sliced apples. Sprinkle with some cinnamon on top.

Bake for 20-25 minutes, or until golden brown and firm in the center. Reduce the baking time if you are using a larger sheet pan!

While the pancakes are baking, thinly dice the apple and heat in a skillet with the butter, cinnamon and sugar. Cook on medium heat until a syrup has formed and the apples have softened, about 10 minutes, stirring often.

When the pancakes have cooled slightly, cut into rectangles and top with the apples and whipped cream!
