HEY THERE!
I know this isn’t what people would consider a burger, but I couldn’t think of a better way to describe it. Maybe a Mushroom Sandwich? But that just doesn’t have the same ring! Anyways, this recipe is deelish! I love portabella mushrooms and the seasoning, melty cheese and crunchy spinach made that much better.
I hope you like this as much as I did!
Ingredients:
1 large portabella mushroom top
1 1/2 tsp Mrs. Dash Southwest Chipotle seasoning
1 tsp olive oil
1 slice Provolone cheese (I used Sargento)
1 whole wheat sandwich thin
1/2 cup fresh spinach leaves
Marinate the mushroom in the olive oil and seasoning for 30 minutes. I like to mix it all up in a plastic ziploc bag and leave it on the counter while I get everything else out and ready. Heat a frying pan and cook the mushroom until tender.
Once cooked, build the “burger” and try not to get the juicy goodness all over your clothes!
