HEY THERE!
If this were the Princess Bride, I’d be showing you the perfect recipe for an MLT- mutton, lettuce and tomato- which is especially good when the mutton is nice and lean.
BUT, this is not the Princess Bride, so you’re stuck with a delicious recipe for what I like to call a “guilt-free” BLT, because I used turkey bacon and used a carb-balanced tortilla instead of bread. It works perfect for on the go lunches, because it can be made in advance and refrigerated (which is what I did).
Ingredients:
3 strips turkey bacon
1 Roma tomato, sliced
1 cup romaine lettuce
2 thin slices turkey breast
Cook the bacon in a pan until crispy (or however you like your bacon!).
Warm up the tortilla for 10 seconds (to make wrapping it easier), then assemble the BLT wrap. I usually lay the lettuce on first, then the tomatoes, bacon and turkey breast. Wrap it all up, slice it down the middle and gobble it up!
If you want to save it for later, wrap it up in some cling wrap, then aluminum foil to keep it fresh. It will last up to a week in the fridge.
