This week’s recipe has been one of my favorite dinners to make recently! This BBQ Pork Flatbread Pizza is seriously SO easy to make, and a yummy treat when I’m wanting pizza but don’t feel like going out. I love how the flavor profile is TOTALLY different from my usual go-to marinara, pepperoni and mushroom pizza – which is probably one of the reasons I like it so much. Sometimes it’s good to mix things up. ;)
The secret ingredient to the BBQ Pork Flatbread Pizza is the Kirkland’s Smoked Pulled Pork from Costco. You can find it in the packaged refrigerated section by all the sausages, and if you don’t have a Costco membership, you need one just for this pork. It’s seriously amazing. You get SO much meat in the package, and I know there’s no way I could replicate the delicious flavors in it at home. So for me, it’s a total must-have in your fridge. Best of all, if you don’t eat all the pork at one time, you can even freeze what you didn’t use and it reheats perfectly!
Another hack I did was using naan bread from Aldi as the crust. You could also get a pre-made pizza crust or your favorite flatbread to make this pizza, but this time I opted for the easiest and handiest option. To make the crust crispy, I baked it while prepping all the other ingredients (about 10 minutes). This made the bottom crunchy and avoided the pizza from getting soggy or mushy.

2 large naan/flatbreads/1 large pizza crust
1 1/2 cups pulled pork
1/3 cup BBQ sauce, plus more to drizzle on top
1 medium onion
1/2 cup mushrooms
1/4 cup spinach
1 tsp olive oil
2 cups shredded mozzarella
Preheat oven to 400.
Line a baking sheet with foil, and place the naan on the sheet. Bake for about 10 minutes then remove from the oven. *If using a pizza crust, follow package instructions*
Meanwhile mix the pulled pork with the BBQ sauce in a small bowl. Set aside.
Cut the onion into thin strips, and slice the mushrooms. In a medium skillet, heat the olive oil and add the onion and mushrooms. Saute until the mushrooms are soft and the onion is slightly caramelized, about 10 minutes. Set aside.
Roughly chop the spinach into bite sized pieces.
Place the spinach on the naan and cover with a thin layer of cheese. Divide the pork and veggie mixture into two and cover the naan. Sprinkle on the rest of the cheese.
Bake for 15 minutes, or until the cheese is melted. Remove from the oven and *optional* drizzle some BBQ sauce on top.
Cut and serve immediately!
