HEY THERE!
This morning I woke up wanting something fruity, refreshing and yummy… And so the Acai Berry Breakfast Bowl was born. It was so nice and cold (I may have gotten a brain freeze from it…), tart, sweet and healthy that I can’t wait to make another!
I have really enjoyed using acai berries lately, not just because I like saying “acai” (ah-sah-ee), but also because they add another dimension to my morning meals. I’m usually not a fan of tart berries- or tart anything- but I really like these because they can be paired with so many other fruits and they have such a unique flavor.
I tried finding some fresh ones at my local Natural Grocers, but all they had were frozen “acai berry smoothie packs” by Sambazon, with was actually exactly what I needed! I wanted the acai to make smoothies, so having these convenient smoothie packs (that were also on sale- SCORE!) was perfect. I strongly recommend buying them, because they are so easy to just throw into a blender with your other fruit, come individually wrapped and make your smoothies that much better.
Fruit base ingredients:
1/2 frozen banana
1 Sambazon Acai Berry Smoothie pack (I got mine at Natural Grocers)
5 hulled strawberries
1/2 canned peach (in extra light syrup)
1/8 cup almond milk
1/2 cup non fat vanilla Greek yogurt
Toppings:
1-2 tbsp shredded coconut
1/2 fresh banana
100 calorie nut pack (I used Emerald Nuts Walnuts and Almonds and chopped the almonds into smaller pieces)
1 slice canned peach chopped
1 strawberry chopped
Blend together the fruit base ingredients until it reaches a smooth consistency. It should be similar to that of a smoothie, but a little bit thicker. Add the milk a little at a time in order to regulate the thickness- less means thicker, more means runnier.
Pour the fruit base in a bowl, garnish with the toppings (have fun and be creative!) and then dig in.
Oh… And try not to get a brain freeze. They hurt.
