A Week of Yummy & Healthy Springtime Meals

Spring was a long time coming this year! For a while there, I thought winter was never going to end. But thankfully, I think my favorite season is finally here! This past week I have really enjoyed the warm weather, cool breezes, chirping birds and the shining sun. Oh and getting to wear sundresses. I really like that too.

One of my favorite parts of Spring is getting to bust out my cute little grill, buy some delicious local produce and try all kinds of different recipes. I love being able to make some deliciously healthy meals, fun salads and guilt-free sweets. For the next week I will share one of my favorite recipes every day!

Chipotle Seasoned Grilled Shrimp Salad- peachesandprayers.com

Chipotle Seasoned Grilled Shrimp Salad

3 oz pre-cooked shrimp
1 tsp olive oil
2 tsp Mrs. Dash Southwest Chipotle seasoning
1 lime
1/3 cup corn
1/2 ripe avocado
1 medium Roma tomato
2 cups romaine lettuce

Marinate the shrimp in the olive oil and seasoning for 30 minutes to an hour. Grill them until browned (shrimp just needs to get color and flavor, no need to cook!).
Make sure to take the tails off before placing the shrimp on the salad.
Assemble the salad with the rest of the ingredients and enjoy!

This is a super easy, simple and delicious meal to make! I loved it and can’t wait to make it again.
