Ingredients:
2 oz whole grain pasta (I used rotini)
1/4 cup chopped squash
1 medium Roma tomato
4 mini-Bella mushrooms, chopped
1/8 cup marinara
Cook the pasta according to the package instructions. A few minutes before the pasta is done, add the squash, tomato and mushrooms and cook with the pasta until tender.
Drain the pasta and vegetables and place in a bowl. Mix in the marinara sauce and top with some fresh Parmesan cheese (optional). Enjoy!!
