Last week I shared the first recipe in my fall series, and today I’m excited to tell you all about my new favorite pumpkin spice waffles. As warned, now that it’s officially fall, I will be making pumpkin everything, and these waffles were no exception!
In the fall and winter months, I crave all things pumpkin…. pumpkin coffee, pumpkin muffins, pumpkin ravioli, pumpkin cookies and, of course, pumpkin waffles. There’s just something so comforting about pumpkin and pumpkin pie spice! I love the warm, cinnamon taste of the spices, and how creamy the pumpkin makes everything.
In true basic white girl fashion, I become sort of obsessed with pumpkins in the fall (if you hadn’t been able to tell already). A lot of people think it’s overused and old news, but did you know that pumpkin is actually GREAT for you?1 In one cup, it has 200% of your daily Vitamin A, is high in fiber and low in calories (which means it helps in weight loss!), and it contains a ton of antioxidants that your body loves. It’s also full of carotenoids, which help keep your skin healthy, in one cup, it contains more potassium than a banana, AND it can help boost your immune system since it contains nearly 20% of your Vitamin C for the day. How ’bout them apples pumpkins?
So I will continue adding pumpkin to errthing, and I’ll do it all in the name of health!
I love pumpkin season.
When I made these waffles, I decided to take a little shortcut and use some premade mix instead of making my own. A few years ago I discovered Kodiak Cakes, and I’ve loved them ever since. I decided to use their Power Cakes mix because it has a ton of protein added to it, which I am all about. My favorite thing about Kodiak Cakes is that they use 100% whole grains and have no crazy ingredients. If you haven’t checked them out, you should! I can get their mixes at Target, but they also sell them at Albertson’s and Tom Thumb.
All it took were the two magic ingredients, pumpkin and spices, to transform their waffle mix into my new favorite fall recipe. My hubby and I had these pumpkin spice waffles for brinner one night (brinner, if you didn’t know, means breakfast for dinner), and they hit the spot. I heated our leftovers the next morning for breakfast, and they were just as good! Guys, you will love these, I promise.
2 cups Kodiak Power Cakes Mix
2 Tbsp brown sugar
1 can pureed pumpkin
1 cup almond milk
1 Tbsp cinnamon
1 Tbsp pumpkin pie spice
1 tsp vanilla
In a medium/large bowl, mix the ingredients together until smooth.
Pour 1/3 cup of the batter into a preheated and oiled waffle iron.
Cook the waffles until done. *Mine has a light that goes off when they are ready, but I let them cook for another 2 or so minutes, to make sure they were cooked through.*
Top with some pure maple syrup and dig in!
NOTE: This dough is VERY moist and thick. I recommend you cook them longer than you normally cook waffles in order to make sure the dough is not raw when you sit down to eat!
