Today I’m sharing some mouthwatering pumpkin recipes to try this October! Trust me when I say you can’t read this on an empty stomach.
October is the month for pumpkins, and trust me, I enjoy it as much as I can. Pumpkin recipes, pumpkin patches, pumpkin carving, pumpkin candles and pumpkin decorations- I love it all! I have so much fun using it in my recipes, and there’s something special about treating yourself to a PSL (especially when it’s homemade) or taking pictures at a pumpkin patch. Pumpkins are probably the main reason I love fall so much!
Before the recipes, though, I want to talk nutrition for a second. I know pumpkin has become pretty mainstream lately, but did you know just how amazing it is?! (Well besides the fact that it’s delicious). Pumpkin is a powerhouse of nutrients. Just one cup of it contains more than 200% of your daily intake of Vitamin A, which is great for your eyesight. It’s also chock full of fiber, which helps aid in weight loss and helps you feel fuller for longer. Pumpkin also contains the antioxidant beta-carotene, which has been linked to preventing certain types of cancers. It’s also perfect for recovering from a workout because of its high amount of potassium that helps restore electrolytes and keeps your muscles functioning their best. Since it’s also full of Vitamin C, it can help boost your immune system, and who doesn’t want that? And, on top of all that, it’s amazing. ‘Nuff said.1
So, to celebrate the month of pumpkins, I rounded up so delectable looking recipes that I’m sure you are going to love. Helloooo pumpkin.

I’m such a fan of breakfast cookies, and these look amazing. It’s clean, and I love cranberries and pumpkin seeds together. Yum!
I love chili in the fall! It’s warm, and reminds me of all the times my mom made us chili growing up. Adding pumpkin in it is one of my favorite ways to spice up a classic recipe.
When Isaac isn’t going to be home, I like to make something for myself that I know he wouldn’t like. For example: veggie burgers. These look SO GOOD, and I can’t wait to try them out.
Uuuuh hello yummy fall dessert! I love cobbler, and it only gets better when you throw some pumpkin in there.
I’m a huge fan of the apple butter at Cracker Barrel, and this stuff looks even more amazing. I would love this in the morning on a piece of toast, or with some yummy pumpkin muffins.

That quinoa black bean soup and pumpkin chilli look amazing! I always think of pumpkin as a sweet treat but I’d love to try it in some savoury recipes!

Pumpkin chili is one of my favorites! The pumpkin makes it creamier, and Iove the flavor it adds. Your husband will love it!
