I know I talk about meal prep all the time, but that’s because I love it SO much. When I first started meal prepping almost three years ago I was in over my head. It felt like a ton of work, planning and organization, but once I got the hang of it, I couldn’t imagine life without it. Not only does meal prepping (and meal planning) make my grocery shopping easier, but I also never have to wonder “what will I eat today?” I can pack my lunch in a matter of minutes, and always have a healthy meal on hand, no matter how rushed I am in the morning. If you haven’t tried meal prepping before, you really should- it’s a game changer!
But let’s be honest… it’s great to talk about the benefits of meal prepping or tips and tricks, but that means nothing if you don’t have some great recipes to use for your meal prep. And that’s where I come in today. ;)
I’ve rounded up some of my favorite meal prep recipes that will make your meal prepping even easier than before. These are all tried and true recipes that I have prepped time and time again for my meals throughout the week. They are high in protein, have lots of veggies, and don’t take hours to prep beforehand on Sunday. You can easily modify them to your specific dietary needs, AND they’re delicious, so it’s a win all around in my book!

Looking for a yummy meal to make now that fall is finally here? This chili will fill you up and warm you from the inside out! It’s loaded with tons of fresh veggies, lean protein, and flavors that will knock your socks off. Best of all it’s Whole30 approved, and one of my favorite chili recipes to date.
When I’m running low on time and need something quick to whip together, this sausage and peppers recipe always comes to mind. Between the amazing Aidell’s chicken sausage and sauteed peppers and onions, this recipe will leave you smiling. It takes less than 30 minutes to make from start to finish, and you can use a variety of fresh veggies to change up the recipe each season.
Spaghetti Squash and Meatballs
This is my all time go-to meal when it comes to meal prepping. Not only is it super tasty, but it’s one of the easiest foods to prep. To cut down on cook time, you can just make a meat sauce rather than meat balls by cooking the veggies, adding protein (cook until mostly done), then simmering with the sauce until all the flavors are incorporated. Easy peasy!
When I’m wanting to add some variety to my meals, I love making these veggie burgers. They are a great vegetarian alternative to a traditional burger, and I absolutely LOVE the smoky spiciness it has from the chipotles in adobo sauce. These black bean burgers also freeze really well, which is a huge win for me! I love making extras and freezing for those nights when I really don’t feel like cooking anything.
Spaghetti Squash Taco Casserole
If you’re a huge taco lover like I am, I’m sure you’ll really enjoy this spaghetti squash taco casserole. It’s spicy, full of veggies, and oh so flavorful. The recipe makes a HUGE batch, which is perfect for meal prepping, and the entire recipe can be made in under 30 minutes. Win win!
