Last Wednesday was my birthday, and as mentioned in a previous post, I made some healthy birthday pancakes to celebrate! They are perfect for a birthday morning when you are wanting something scrumptious without any guilt!
Pancake Ingredients:
1 cup Bisquick original mix
1/2 cup unsweetened vanilla almond milk
1/4 cup vanilla nonfat Greek yogurt
1 medium ripe banana mashed
2 tbsp chocolate chips
Sprinkles (as many as you want- it’s your birthday!)
Cooking spray
Icing Ingredients:
1/2 cup powdered sugar
1-3 tsp almond milk
Mix all of the ingredients except the chocolate chips and sprinkles together until smooth (there may be some lumps because of the banana, but those are okay). Fold in the chocolate chips and some sprinkles.
Spray a frying pan or skillet with cooking spray and place about a 1/4 cup of batter on the heated pan/skillet. Cook the pancakes for a couple of minutes on each side. Keep an eye on them to make sure they don’t burn. Flip when the first side is a light brown color and cook until done in the middle!
Make the icing by stirring in the milk one teaspoon at a time, until it reaches an icing consistency. Drizzle the icing over some pancakes (I ate three!) and add some sprinkles for some more pizzazz!
My recipe made about 5 pancakes. I had three on my birthday and two the next morning. They are great toasted for a bit and drizzled over with some light or sugar free syrup.
