I have a confession. I play favorites and it’s time I admitted it. I LOVE sweet potatoes. They are (by far) my favorite root veggie, and 10/10 times I’ll choose them over any other type of potato. I wrote about the benefits of them the other day (which you can read here), and that only made me want to eat them even more! They can be cooked so many different ways, they can be sweet or savory, and they are perfect for spicing up any meal. I eat sweet potatoes all the time, but I especially crave them during the summer and fall months. I don’t know why, but there’s just something about them that make me think of long summer days and the crisp promise of fall.
Growing up, the only times I ever really had sweet potatoes was in the casserole form over the holidays. I’m not a fan of the canned version of them, and therefore always claimed I didn’t like them. Every once in a while my mom would bake them wrapped in foil, and put butter, cinnamon and brown sugar on top. I liked that a lot better, but it wasn’t until I was older and cooking on my own that I really fell in love with them. The first time I truly enjoyed sweet potatoes was when I roasted them with rosemary and honey, and I’ve been hooked ever since. I’ve baked them, roasted them, boiled them (and used the puree for other recipes) and more recently, grilled them.
During the spring and summer I also crave grilled foods- It’s just what you do when the days get longer and air is warmer. So the other day when I was getting ready to make dinner I decided it was time to try something new and grill my sweet potatoes. I looked up some recipes online to see what I needed to do, then jumped in with both feet. I loved how they turned out, and I can’t wait to do it again! This time I just grilled them on my tiny gas camping grill (#apartmentprobs), so I can only imagine just how delicious they would be if I had used a charcoal grill. Next time I’ll sweet talk Isaac into doing that for me! ;)
Ingredients:
2 medium sweet potatoes
1 Tbsp olive oil
1 Tbsp paprika
2 tsp onion powder
2 tsp garlic powder
2 tsp thyme
Salt and pepper to taste
In a large pot, boil the sweet potatoes until a fork slides in easily (about 10-15 minutes). You don’t want them too soft, but you also don’t want them super undercooked either.*
Remove the potatoes and carefully slice into flat pieces.
Drizzle the olive oil on top and rub it around, making sure both sides are evenly covered. Sprinkle the spices on the potatoes, and once again making sure both sides are evenly covered.
Meanwhile, heat your grill on medium heat. Place the sweet potatoes on the grill about an inch apart. Flip after about 5 minutes, or until they have developed a nice char. Cook on the other side for another 5 minutes.*
Remove from heat, sprinkle on a little more salt and pepper, and enjoy!
*I did not boil my potatoes long enough, so after removing from my grill I finished them off in the oven at 350 for another 10 minutes, or until soft.
