Easy Homemade Popsicles

Ingredients

Scale

2 cups fresh or thawed fruit (strawberries, peaches, blueberries, etc)
1/4 cup sugar (add more or less as you desire)
1/2 cup water


Instructions

Peel the fruit (if necessary) and cut the fruit into rough cubes. Place them in a bowl and using an immersion blender, blend them down until mostly liquid. 
Add the sugar and water, then continue to blend until you’ve reached your desired consistency. I blend until there are no chunks of fruit remaining. 
*Alternatively, you can add all the ingredients to a blender and blend until liquid*
Carefully pour the mixture into your popsicle mold to the top. Place the lid and insert the popsicle sticks into each slot. 
Transfer the mold to the freezer and freeze for 24 hours. I like to place my silicone mold in a small rectangular pyrex dish to keep it from flopping over. 
Pop them out and enjoy! I like to put them in popsicle bags so it’s easy for the kids to grab them at snack time.
