Just like pretty much every other kid out there, my children LOVE popsicles. Over the past year I’ve really tried to be intentional about making things at home, and this summer I decided to tackle their favorite summer treat. Enter today’s recipe for easy homemade popsicles.
Every June we go blueberry picking for Father’s Day. It’s been a tradition since James was a toddler, and something we all look forward to. This year the farm we went to sold homemade popsicles, and of course we had to give them a try. Y’all… they were amazing. We enjoyed them so much that I even asked the owner if she would share the recipe.
Turns out the homemade popsicles are really only 3 ingredients: fruit, water and sugar. I was sold. When we got home, I ordered a popsicle kit, bags to put them in and got to work making some with the kids. We started with blueberry (since we had 6 lbs of berries we had picked at the farm), and since then we’ve made strawberry, peach and a mix of strawberry/peach. I think my next flavor to try will be watermelon. Doesn’t that sound delicious?!
To make the popsicles, all you need is a blender or immersion blender (which is what I use), a mold (I actually LOVE this silicone one because I can push the popsicles out from the bottom – game changer), sticks and bags to put them in. The total investment is minimal (especially if you already have a blender), and you’ll have endless amounts of popsicles to enjoy all summer long.
2 cups fresh or thawed fruit (strawberries, peaches, blueberries, etc) 1/4 cup sugar (add more or less as you desire) 1/2 cup water
Instructions
Peel the fruit (if necessary) and cut the fruit into rough cubes. Place them in a bowl and using an immersion blender, blend them down until mostly liquid. Add the sugar and water, then continue to blend until you’ve reached your desired consistency. I blend until there are no chunks of fruit remaining. *Alternatively, you can add all the ingredients to a blender and blend until liquid* Carefully pour the mixture into your popsicle mold to the top. Place the lid and insert the popsicle sticks into each slot. Transfer the mold to the freezer and freeze for 24 hours. I like to place my silicone mold in a small rectangular pyrex dish to keep it from flopping over. Pop them out and enjoy! I like to put them in popsicle bags so it’s easy for the kids to grab them at snack time.
