HEY THERE!
One of my new favorite breakfast foods lately is overnight oats. I was a little iffy about the idea at first, but after my first attempt I was sold! It takes me about 5 minutes to prep the night before, and they are ready whenever I want breakfast on the morning… The perfect breakfast for people on the go, or simply for people who are lazy like me! All you do is mix up the base mixture, add any spices you want, and put it in the fridge overnight. When you are ready to eat it in the morning, add the toppings you want and enjoy!
This breakfast is packed with healthy oatmeal, seeds, nuts, fruit and protein, so it fills me up and give me the energy I need for the morning! During the summer I just eat them cold, but when it starts getting colder outside, I heat them up for about 30 seconds then add the fruit toppings. Delish!
The best part about overnight oats (or really any type of oatmeal) is that you can give it any flavor you want! I just make the base mixture and add any spices, fruit and toppings I want to change the flavor. It’s your chance to let your creativity juices flow!
Base Ingredients (mix up at night and leave in the fridge till morning):
1/2 cup rolled oats
1/4 cup unsweetened vanilla almond milk
1/4 cup fat-free vanilla Greek yogurt
1 tbsp chia seeds
2 tsp ground flax seeds
2 tsp quinoa (raw, not cooked)
2 tsp raw sunflower seeds
1 packet stevia
Banana Nut Topping Ingredients (add in the morning):
1/2 sliced banana
1/4 tsp cinnamon
1 tbsp shredded coconut
2 tsp chipped pecans
