8 Ingredient Protein Bars

Ingredients

2 cups dates (pitted)
1/3 cup water
1/2 cup honey
1 tsp vanilla
1 tsp salt
2.5 cups oats
1.5 cup protein powder (I used Naked Pea)
1/2 cup mini chocolate chips

Instructions

  1. Place the dates and water in a food processor or blender and blend until a paste has formed.
  2. Add the honey, vanilla, salt, oats and protein. Continue to blend the mixture until it’s all combined. You should have a thick but not super sticky mixture. Add more water 1 tbsp at a time if needed.  
  3. Add the chocolate chips and pulse to combine. 
  4. Line a large pan with some parchment paper and spread the mixture evenly in the pan, about 1/3 inch thick. Refrigerate until it’s solid and no longer sticky. 
  5. Cut the bars with a pizza cutter or knife. I aim for about 1.5 x 3 inches or 50 grams  per bar. Cut up some parchment paper into small rectangles and wrap it around each bar so they don’t stick together. 
  6. Keep in an airtight container in the fridge for up to a week, or in a sealed bag in the freezer for up to 3 months. 

Notes

You can change up the flavor of the bars depending on which ingredients you use! Try using maple syrup instead of honey + pumpkin pie spice for a fall treat. Or add peanut butter for something extra decadent.
