Ingredients

2 cups dates (pitted)
1/3 cup water
1/2 cup honey
1 tsp vanilla
1 tsp salt
2.5 cups oats
1.5 cup protein powder (I used Naked Pea)
1/2 cup mini chocolate chips
Instructions
- Place the dates and water in a food processor or blender and blend until a paste has formed.
- Add the honey, vanilla, salt, oats and protein. Continue to blend the mixture until it’s all combined. You should have a thick but not super sticky mixture. Add more water 1 tbsp at a time if needed.
- Add the chocolate chips and pulse to combine.
- Line a large pan with some parchment paper and spread the mixture evenly in the pan, about 1/3 inch thick. Refrigerate until it’s solid and no longer sticky.
- Cut the bars with a pizza cutter or knife. I aim for about 1.5 x 3 inches or 50 grams per bar. Cut up some parchment paper into small rectangles and wrap it around each bar so they don’t stick together.
- Keep in an airtight container in the fridge for up to a week, or in a sealed bag in the freezer for up to 3 months.
Notes
You can change up the flavor of the bars depending on which ingredients you use! Try using maple syrup instead of honey + pumpkin pie spice for a fall treat. Or add peanut butter for something extra decadent.
