HEY THERE!
My lunch today was de-to-the-licious! I was very hungry and really needed something to fill me up. I loved the flavor of the burger and veggies, and it only made things better knowing I was eating something good for me too!
Disclaimer: If you do not like beans, you probably won’t like this burger! But I do, so it was perfect!
The recipe for the burger was from the Tone It Up nutrition plan. I bought it couple of weeks ago and am really loving it! Tone It Up is a site run by two women in California who have a passion for fitness, clean eating and living a healthy lifestyle. They make eating lean and green so flavorful and delicious, and their workout videos are so much fun to do! I was stuck in a fitness rut ’till I stumbled across their site and was instantly hooked. If you are trying to lose weight or simply get toned and learn some healthier eating habits, then you should try out Tone It Up! I really am glad I did.
One of my favorite parts about this recipe is how easy it was to make! All it took was one bowl, a skillet and a cutting board (to slice up the avocado and peppers and mold the burger). It cooked in just a few minutes and hit the spot! Now for the recipe…
Ingredients:
1/2 cup black beans (mashed up real good)
1/4 cup ground flax seed
1 tsp chili powder
1 tsp Mrs. Dash chipotle seasoning
Mix up the ingredients in a bowl. Add a little water to the mixture until it forms a consistency that will mold and stay together. Heat up about a tsp of olive oil in a skillet and place the burger in the middle. Cook for a couple of minutes on both sides, until it turns a nice crispy brown color. Remove from the skillet and enjoy!
I paired it with a handful of spinach leaves, half an avocado (with some salt for seasoning) and 3 mini sweet peppers that I cooked in the same skillet and sprinkled with the chipotle seasoning.
