One of my current go-to breakfasts lately has been making breakfast yogurt parfaits. They are filling, delicious and packed full of protein, vitamins and basically yummy goodness. I love mixing in all types of fruits and trying out the different flavors of granola with them. That’s be beauty of these parfaits- they are so versatile!
The other day I decided to make a fall inspired one with apples and cinnamon… and boy oh boy it was so good I decided to make it again for my breakfasts this week! It tasted like the apple crisp my mom makes, but healthified! It was very filling and oh so delicious.
Ingredients (makes 2)
1 medium sized apple
1 banana
1/2 cup granola (I used some organic apple cinnamon granola from Aldi)
4 tsp raw pumpkin seeds
2 tsp unsweetened coconut
2/3 cup nonfat vanilla Greek yogurt
Layer the ingredients in a container (I always use mason jars!), then dig in and enjoy. They will keep up to a week in the refrigerator with the lid closed.
Another parfait I like to make is basically made with any fruit I find in my fridge! I usually just open my fridge, look for any fruit I have and pair it with my favorite nonfat vanilla Greek yogurt- Light and Fit. You can find it at any local grocery store!
Ingredients (makes 1)
1 banana
1/4 cup granola
1/3 cup nonfat vanilla greek yogurt
1-1 1/2 cups of any fruit you have! I have used peaches, blueberries, strawberries, blackberries, apples, kiwi, and so on)
Sprinkling of unsweetened coconut- optional, but delicious!
You can also add any other toppings of your choice, like chia seeds, raw sunflower seeds, raw pumpkin seeds, pecans, almonds, etc. But make sure to go light on these. A little goes a long way!
The best part is you can make your own delicious creations and combinations. It makes breakfast fun, full of nutrients, and a delicious way to get your fruit in the morning, as well as some healthy protein, calcium and fiber.
